The notion of providing fresh herbs, for many is a difficult one, however here in Italy it is totally common place. Almost every house in Italy maintains its kitchen with fresh basil, sage and rosemary, without the ‘bat’ of an eyelid… it’s so very… normal!

The sun, knowledge and most importantly the will to provide the very best of fresh herbs in the kitchen drives almost every Italian to cultivate fresh herbs throughout the summer months in the vicinity of their kitchen door.

There are, however many ways in which one can grow aromatic herbs for the kitchen… there is the small vase near the door scenario- that houses some simple basil and rosemary… to the complex, formal layout adopted by the contemporary designer. I believe, as a garden designer, that one can display the necessity for fresh Italian herbs by displaying them at their finest… in a formal layout.

Italian herbs can look absolutely magnificent, if given a minimum of formality in which to display themselves. With the minimum of fore-planning one can transform any level site into the most delectable… and practical, formal, Italian herb garden.

It really doesn’t take Capability Brown (famed English garden designer) to come up with an effective, formal display for aromatic herbs. Simple geometry and a basic understanding of such plants can easily excite the mind and project a coherant, herbal display that can excite and provide healthy, organic herbs all year round, in any Italian garden. It really could not be easier!

Cipriani has always made their own pasta and the experience they have gained over the years, has taught them that in egg pasta, there are three important elements. The flour must be made from durum wheat, the best grade eggs must be used and the pasta must be worked with care, rolled over and over again, never so much as to overheat it, but enough to give it that special quality. If all these precepts are followed, the pasta will have the essential characteristics of being both firm and soft. Two attributes that would seem to be in opposition, but which real pasta lovers recognize perfectly. If pasta of this class is then dried slowly at a low temperature, the resulting product will be unique. Serves 5 and cooks in 4 minutes.

Colfiorito, where our lentils come from, is a small town on the border between Umbria and Marche. Located on a 800mt. plateau on the sea level in the center of the Colfiorito Natural Park, a beautiful reservation in the heart of Italy, disseminated with marshes and jewels of religious architecture. Here, Antonio and Adriana Cappelletti supervise the family production of lentils, chickpeas, beans and other local agricultural products such as potatoes and saffron. Farmers selling their products out of jute sacks along the roads that cross the Colfiorito Park are still a common sight. All the steps of the lentils and chickpeas production, the sawing of the grains, the picking, only when the plants reach their carachteristic yellow and orange color, the natural dessication and the cleaning inside the stables and finally the packaging, are managed painstakingly by the Cappelletti family according to a tradition passed down from generations. The Colfiorito farm also produces exceptional organic chickpeas, also favored by the altitude of the plateau where the air the water and the ground create perfect conditions for nutritiuos and flavorful crops. With a skin softer than other chcikpeas brands, you will need to soak them for a shorter time to enjoy all their full flavor and consistency.
